Mocha Waffles

  • 2 Waffles depending on waffle maker
  • Cooking time: 6-10 Minutes, depending on size and power of waffle iron
  • Preparation: 30 Minutes
Ingredients
  • All-purpose flour - 7 cups
  • Salt - 3 teaspoons
  • Granulated Sugar - 2 cups
  • baking powder - 3 tablespoons
  • Semi-sweet mini chocolate chips - 8 tablespoons
  • very finely ground Community® coffee Breakfast Blend - 2 teaspoons
  • large eggs, separated - 16
  • Whole Milk - 6 cups
  • butter, melted - 6 sticks / 2 cups
  • Vanilla extract - 2 tablespoons

An excellent way to start off the morning with chocolate coffee waffles topped with cinnamon whipped cream. 

 

DIRECTIONS

In a large bowl sift together the flour, salt, sugar and baking powder. Make a well in the center of the dry ingredients and add mini chocolate chips and finely ground coffee.  In a separate bowl, whisk egg yolks, milk and melted butter together.  Add vanilla extract.

Pour the wet ingredients into the dry ingredients.  Stir well until completely combined.  The batter will be lumpy.  Be careful not to over mix.

In a separate bow, whip egg whites to a soft peak.  Fold into batter in 2 parts. Ladle 6 ounces of batter on to pre-oiled waffle iron. Cook until golden and crispy.  Approximately 3 – 6 minutes per waffle.

Serve with Cinnamon Whipped Cream.

 

Cinnamon Whipped Cream

 

A versatile topping for most any dessert.

 3 cups heavy whipping cream

½ cup powdered sugar

¾ teaspoon ground cinnamon

2 tablespoons vanilla extract

 

Directions:

In a large bowl, whip cream to soft peaks. Add sugar, cinnamon and vanilla.  Continue whipping until desired peak.

Serve with Mocha Waffles

 

NOTE: Do not over beat cream or it could turn to butter.
