Coffee & Chili Rubbed Steak Tip Skewers

  • Cooking time: 15-18 minutes cooked to medium-rare
  • Preparation: 25 Minutes
  • chili powder, preferably Ancho - 2 teaspoons
  • Finely ground Community® coffee Café Special® - 3 teaspoons
  • dark brown sugar - 2 teaspoons
  • Dry mustard - 1 teaspoons
  • Ground coriander or cilantro - ½ teaspoon
  • Salt - ½ teaspoon
  • Freshly ground pepper - ½ teaspoon
  • Granulated garlic - 2 teaspoons
  • Skirt or round steak trimmings (1/4” cubes) - 6 pound filet
  • 20 skewers - metal or bamboo (soaked in cold water)

Great appetizer or garnish for salad.


Preheat well-oiled broiler to 350°F.  In a small bowl, combine all ingredients until well blended. Dip and coat steak pieces so that all sides are covered. Skewer the meat leaving a small gap to ensure even cooking.

Broil steak on a well-oiled broiler. Cook to desired doneness. When done, serve with ramekins ½ filled with grain mustard and wild flower honey or BBQ sauce on the side. 

NOTE:  This rub can be used for steaks, ribs, pork chops or chicken
